A cocktail that can turn from day to night.
To make the simple syrup, mix ¼ cup of hot water with ¼ cup of sugar. Mix well and allow to cool before use.
Peel and chop 2 plums. Muddle the plums with the thyme, simple syrup and lemon juice until all of the plum juices have been released.
Shake with ice in a cocktail shaker.
Pour over crushed ice evenly between two glasses, and top off with [yellow tail] Prosecco.
Garnish with extra plum slices and thyme sprigs, then serve immediately.
