- 2 bottles of [yellow tail] Chardonnay
- 180 gm honey (1/2 cup)
- 3 cinnamon sticks
- 6 cloves
- 4 star anise
- 5 sprigs of thyme
- 1 orange rind, thinly peeled
Put all ingredients in a large saucepan and simmer over a low heat, stirring occasionally, for 5 minutes.
Remove from heat and let it sit for 20 minutes to allow flavours to develop.
When you're ready to serve, reheat the saucepan over a medium heat until warm, then serve immediately.
Garnish with extra orange peel, cinnamon sticks or star anise.
