INGREDIENTS
- 1 bottle of [yellow tail] Bubbles, chilled
- 1 cup sugar
- 1 cup boiling water
- 2 Earl Grey tea bags
- Fresh lemon wedges (for garnish)
- Mint leaves (for garnish)
PREPARATION
- Dissolve the sugar in 1 cup of water and bring to the boil in a saucepan. Reduce the heat to low until the mixture becomes a syrup and remove from heat. 
- Place the tea bags in the mixture and let it come to room temperature. 
- Refrigerate until cold. 
- To serve, add 3 tablespoons of the tea syrup to a glass before adding a serving of [yellow tail] Bubbles and garnishes.
