Introducing new [yellow tail] Whiskey Barrel Cabernet Sauvignon

Red wine aged in whiskey barrels has rapidly increased in popularity due to the enhanced flavor and additional layers of complexity.

At [yellow tail], our winemakers have crafted a new Whiskey Barrel wine putting a subtle twist on our traditional Cabernet Sauvignon. We are excited to bring it to our Canadian fans and would like to share a bit more about the process and what makes this wine unique.

John Casella, the owner of [yellow tail], is also fortunate to own premium wineries across Australia and therefore has access to some of the best wine barrels in the country. The winemakers selected high-quality Australian oak wine barrels to create this new wine.

Each barrel goes through a special regime developed by and exclusive to Casella in preparation for aging the wine. They are then filled with Australian single malt whiskey to infuse the rich flavors of the whiskey into the barrels. After the whiskey is removed, they are filled with [yellow tail] wine for a minimum of 30 days to impart subtle flavor nuances and additional layers of complexity. This whiskey-aged wine is then blended, adding an elegant and a velvety structure to the final product.
