INGREDIENTS
- 3 cups [yellow tail] Shiraz
- 1/2 cup olive oil
- 1/4 cup soy sauce
- 4 sliced shallots
- 2 cloves garlic, minced
- 2 tablespoons brown sugar
- Worcestershire sauce
- Tabasco sauce
METHOD
- Take 3 cups of [yellow tail] Shiraz, one for the chef to drink and 2 for the marinade.
- Add 2 cups of the red wine to a 1/2 cup of olive oil, 1/4 of a cup of dark soy sauce, 4 sliced shallots, 2 minced cloves of garlic, 2 tablespoons of brown sugar and a splash of Worcestershire sauce and Tabasco sauce.
- Place all ingredients in a saucepan, bring to the boil for ten minutes then allow to cool. The marinade will happily accompany pork ribs, 2 inch think T-bones or even chicken skewers, just allow the meat to sit in the sauce for several hours before cooking.
